Influenced by Japanese, Indian, Chinese, Thai, and Italian flavours and ingredients, he has worked as a cheese maker and chef in Calabria, Italy; consulted on a several spa and wellness menus for a selection of top spas in both the USA and Canada. In Toronto he refined his craft, and went on to work in some of the top culinary establishments in Canada and The Bahamas.

This internationally trained and travelled chef is now ready to bring his flair and genius to Song Saa Private Island where you will be able to savour finely executed dishes from around the world, which subtly blend his favoured influences and flavours.
